I’m so sad that my summer at home was short this year for several reasons but one of them is the fact that I didn’t get to make nearly as much jam and jelly and other goodies as I usually do. So with one week remaining in my summer I decided to get into gear and make some applesauce and pickles. Their 2 of my favorite things to make and to eat so I would be particularly sad without them for a whole year. I got 2 half bushels of sauceing apples at a farm stand and my aunt managed to pick up some pickling cucumbers from a different stand (thank goodness we’ve been looking everywhere). After 6 hours of cutting, cooking, squeezing, and peeling we got a ton of canning done. So much that we ran out of rings. Kosher dills, Spicy pickles, applesauce, and apple pie filling. I’m excited for the taste of summer all year-long and even set aside some applesauce to turn into apple butter today. Yum yum, yummy.
